Poriyal

Ingredients
Onion - 1 cup ... 1 nos (finely chopped)
Grated or shredded vegetable - 8 cups (shredded)
Split Chana daal - 2 tbsp
Urad daal - 2 tbsp
Mustard - 1/2 tsp
Green chilis - 4 nos (split)
curry leaves - 10-12 nos
Cumin powder - 1/4 tsp (optional)
Coconut gratings - 1/2 cup


Oil
Salt


Preparation method
  • Boil channa daal in water for about 5 minutes or until half cooked
  • Heat oil in a pan. Add mustard and urad daal and fry until the daal is light brown
  • Add green chillis and curry leaves. Fry for about a minute
  • Add onion and fry in low heat until golden brown
  • Add vegetable and stir fry in low heat until fully cooked (Add cumin powder in about 2 mins if required)
  • Add channa daal, coconut gratings and salt as required. Cook for 2-3 mins
Vegetable ... cabbage, finely chopped cauliflower, grated beetroot, finely chopped beans, grate beetroot, cabbage and peas, grated chow-chow
