Brinjal and Potato Fry


Ingredients
Brinjals - 2 cups (diced 1 inch cubes)
Potatoes - 1 cup (diced 1 inch cubes)
Onion - 1/2 cup (finely chopped)


Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Urad dhal - 1 tsp
Curry leaves - 1 sprig


Chilli powder - 1 tsp
Corriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp


Tamarind paste - 1/4 tsp (mix in 1/4 cup water)


salt to taste
Oil - 2 tsp


Preparation method

  • Boil potatoes with a little salt until half done. Remove water and keep separately
  • Heat oil in a pan. Add mustard seeds, curry leaves and allow them to splutter
  • Add urad daal and fry until light brown
  • Add onions and turmeric powder. Fry until golden brown
  • Add tamarind paste and cook until it boils
  • Add chilli powder and corriander powder and cook until raw smell goes away 
  • Add brinjal and potatoes. Cook until done
