Ingredients
Brinjal - 3 nos (cut lenghtwise)
Small Onions - 12-15 sliced into small pieces
Tomato - 1 or 2 (cut into small cubes)
Garlic - 8-10 pods (whole ... possible smahsed a little)
Mustard - 1/2 tsp
Urud dhal - 1/2 tsp
Cumin seeds - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Curry leaves - 10-12 leaves
Tamarind paste - 1 tsp (1 lemon size ball soaked in warm water)
Turmeric powder - a pinch
Sambar powder - 1 tsp
Chili powder - 1 tsp
Raw rice flour - 1 tbsp (mixed in water)
Oil

Preparation Method
- Heat oil in a pan and when it is hot add urad daal, curry leaves, fenugreek seeds, cumin seeds and mustard seeds
- When it splutters, add onions and fry until translucent
- Add turmeric powder and cook for a minute
- Add tomatoes and cook until mushy
- Add brinjal and cook until half cooked
- Add salt, chili powder and sambar powder. Fry for a couple of minutes
- Add tamarind paste/water
- Allow to boil for 10-15 minutes until gravy thickens
- Add raw rice water and boil for 2-3 mins
