Ingredients

Plain flour - 3 cups 
5 eggs
Butter - 1 1/2 cup (softened)
Sugar - 3 cups
Vanilla essence - 1 tsp
Baking powder - 1 tbsp
Milk -  2 cups
Cinnamon powder - 1 tsp
Black walnuts - 1 cup (chopped)


For buttercream

Unsalted butter - 1 cup/2 sticks (softened)
Egg yolk - 1
Vanilla essence - 1 tsp
Confectioner's sugar - 2 cups
Instant coffee powder - 1 tbsp

Preparation method
  • In a mixing bowl, mix margarine, butter and sugar until soft and light.
  • In a separate bowl, beat the eggs
  • Add flour, baking powder, ground cinnamon with the eggs and mix well
  • Add milk and mix well
  • Add the butter/margarine/sugar mix and mix thoroughly
  • Add vanilla essence and black walnuts and mix thoroughly
  • Preheat oven to 350 F.
  • Grease a 10-inch tube with butter and dust with flour. Pour this batter into two 10 inch greased pan.
  • Place pan into preheated oven
  • Bake for an 45 minutes or until a knife inserted into the center comes out clean
  • Take out of oven to allow to cool for 15 minutes then turn out of the pan
  • Beat the butter until light and fluffy
  • Add the egg yolk and vanilla and continue mixing
  • Add the confectioners' sugar in small portions and continue mixing until smooth and creamy
  • Dissolve the coffee powder in 1 tsp of hot water
  • Add coffee solution and mix thoroughly
After the cake slabs have cooled, spread a layer of butter cream as cement before stacking the slabs. Spread the rest of the cream over the cake to complete!
