Egg masala

Ingredients
Eggs - 5 (hard boiled)
Onions (medium size) - 2 nos or 1.5 cups (finely chopped)
Tomato - 3 nos or 2 cups (chopped)
Mustard seeds - 1/2 tsp
Curry leaves - 1 sprig 
Fennel seeds - 1 tsp
Cinnamon - 1 inch
Cloves - 7-8
Ginger paste - 1 tsp
Garlic paste - 1/2 tsp
turmeric powder  - 1/4 tsp
Chili powder - 2 tsp
Coriander powder - 1 tsp
Cumin powder - 1/2 tsp
Garam masala - 1 tsp
Coriander leaves - Chopped finely
Salt as required


Preparation method
- Hard boil eggs and slice them into halves (at times I have just slit them and at times I have cut them into four)
- Heat oil and add mustard seeds. Saute until they splutter
- Add cloves, fennel seeds, curry leaves and cinnamon and saute for a minute
- Add ginger and garlic paste. Saute for a minute
- Add onions and fry. Add turmeric powder after a couple of mins. Fry onions until light brown
- Add tomatoes and fry until they get mushy
- Add chili, coriander, cumin powders and Garam masala. Saute until oil separates
- Add 2 cups of water (or as required) and the eggs, bring to boil (an alternative is to take half the egg yolks and mash them and add mashed yolk to the curry)
- Add chopped coriander leaves for garnish
