Peanut podi (Shenga pudi)

Ingredients

Roasted peanuts (no husk) - 1 cup
Red chili - 10-12
Copra - 1/4 cup (optional)
Tamarind - 1/2 ball (1 & 1/2 inch single strip)
Garlic - 1 tsp
Hing - 1/2 tsp
Coriander seeds - 1 tbsp (optional)
Salt to taste

Preparation method

  • Roast coriander seeds, tamarind and red chili in little oil
  • Roast copra for a few minutes until light brown
  • Grind coriander seeds, tamarind, red chili, salt, hing and garlic at the end as fine as possible
  • Add groundnuts. Pulse grind stopping often. Grind to a coarse consistency of your choice
