Ingredients #1
Raw jackfuit - 1.5 cups (12-15 pieces) (cut into 0.5 x 1 x 1.5 inch cuboids
Prep #1
- Pressure cook for 3-4 whistles with some salt. Drain in a sieve to remove all water. Freeze extra pieces.
- Use tikka recipe and make tikka
Ingredients #3 - Masala
Mustard oil - 2 tbsp
Cumin seeds - 1 tbspCloves - 4-5
Cardamom - 2-3
Star anise - 1
Javitri - 1
Pepper - 1/2 tsp
Nutmeg - 1/8 tsp
Cashew - 1/4 cup
Garlic - 2 tbsp
Ginger - 1 tbsp
Onion - 1/2 cup (finely chopped)
tomato - 1/2 cup (grated)
Red chili - 2
Coriander powder - 1 tsp
Chili powder - 1 tsp
Chaat masala - 1/2 tsp
Garam masala - 1/2 tsp
Meat masala - 1/2 tsp
Green chili - 2
Prep #3 - Masala
- Heat mustard oil in a pan. Add a pinch of salt to neutralize the mustard oil smell
- Add cumin, cloves, cardamom, anise, nutmeg flower, pepper corns and fry for a few seconds
- add cashew, ginger, garlic and fry for a few seconds
- Add onion and cook until lightly brown
- Add tomato and green chili. Cook well
- Add red chili, nutmeg powder, chili powder, chaat masala, garam masala powder, meat masala and mix well. Cook until raw flavor is gone
- Add a little water and cook for a few minutes. Take of hear, cool down and make a paste
Ingredients #3 - Gravy
Mustard oil
Cumin seeds - 1 tsp
Onion - 1/2 cup (1/2 inch slices)
Tomato - 1/2 cup (1/2 inch diced)
Garlic - 2 tsp
Ginger - 1 tsp
Lemon juice - 1/2 tsp
Chili powder - 1 tsp
Green chili - 2
Preparation method
- Heat oil in a pan. Fry Cumin seeds
- Add onion and cook a little
- Add tomato and cook a little
- Add ginger garlic and cook a little
- Add lemon juice and salt. Cook a bit
- Add chili powder and green chili. Sautee for a few minutes
- If you have any marinade, add to the gravy. Add paste. Cook well
- Add tikka and mix well.
- Add 1/4 cup onion triangles, tomatoes, butter and coriander leaves. Add hot water 1/2 cup. Mix well and cook covered until oil separates
- Add 1/2 tsp of each (coriander powder, garam masala, meat masala, chaat masala, chili powder). ginger and coriander. Add 1/4 cup hot water. Cook covered until oil separates.
