Nutri Masala (Soya chunks masala)

Prep for cooking

Spinach leaves (boiled & ground to paste) - 1/3 cup
Boiled mashed potato - 1/4 cup
Soya chunks - Pressure cook for 1 whistle. Do not drain 
Soya chunks - 1.25 cup 
Filtered Tea - made with 1 tsp team leaves
Gooseberry powder or Amchur powder - 1/4 tsp
Salt - 1/2 tsp
Water - 2 cups

Masala base (Grind to a paste with 1/2 cup water)
RC full - 3
GC - 3
Ginger - 1 inch
Pepper powder - 1/2 tsp
Salt - 1 tsp
Chaat masala - 1/2 tsp 
Soya sauce - 2 tbsp
Coriander powder - 1 tbsp
Garam masala - 1 tsp
Chole masala - 1/2 tsp (optional)
Meat masala - 1/2 tsp
Paav bhaji masala - 1/2 tsp
Kasoori methi - 1 tbsp
Mint powder - 1 tsp
Hing - 1/2 tsp
Elaichi powder - 1/2 tsp
Black salt - 1/2 tsp
Garlic - 8 good size pods

Ingredients - Cooking
Ghee - 2 tbsp
Butter - 2 tbsp
Cumin seeds - 1 tbsp
GC - 2 (slit)
Ginger - 1 inc (smashed)
Coriander Leaves - 2 tbsp
Garlic - 2 tbsp
Onion 1 cup (finely chopped)
Tomato - 1/2 cup finely chopped

KRC powder - 2 tsp
Pom seeds powder - 1 1/2 tbsp

Preparation

  • Heat 2 tbsp ghee and 2 tbsp butter in a vessel
  • Fry cumin seeds for a few seconds
  • Fry green chili, ginger and coriander leaves for a few seconds
  • Add garlic and fry for about 30 seconds
  • Add onion and fry until translucent in low-medium heat
  • Add tomato and fry  until mushy and oil separates
  • Add ground masala paste and cook for a minute
  • Add Kashmiri Red Chili powder. Cook for a minute
  • Add pom seeds powder. Cook until oil separates
  • Add spinach and mashed potatoes and mix well. Cook for 1-2 minutes
  • Add 1 cup water and cook in low hear for 8-10 minutes. Color will change to dark green (almost black)
  • Add pressure cooked soya chunks with broth. Cook for 10-15 mins until nice and thick

Final prep for serving

Onions - 1 cup (thin long slices)
Capsicum - 1 cup (thin long slices)
Carrots - 1/2 cup (thin long slices)
Ginger - 1 tbsp (smashed)
Green chili - 4-5 (slit)
Cumin powder - 1 tsp
Coriander leaves - 1/4 cup (finely chopped)
Lemon juice - 1/2 tsp
Cream - as needed

Final Preparation for serving

  • Heat oil and add butter
  • Add ginger and green chilis. Saute for a minute
  • Add onions, capsicum, carrots and lemon juice. Saute for 2-3 mins
  • Add cumin powder and fry for a minute
  • Add cooked nutri masala. Mix well.
  • Add coriander leaves and take off head.
  • Drizzle heavy cream
