Ingredients

Rava (upma) - 1/3-1/2 cup (this variation determines hardness vs crumbliness) 
Maida flour - 1/4-1/3 cup (this variation determines hardness vs crumbliness) 
Rice flour - 1/4
Onion - 1 cup (thin long slices)
Salt - 1 tsp
GC - 1 (chopped)
Ginger - 1 tbsp (finely smashed/chopped)
Sesame - 2 tbsp
Poppy - 1 tbsp
Curry leaves - 1 tbsp (chopped)
Groundnuts - 2 tbsp (finely chopped) [Optional]
Cashew- 2 tbsp (finely chopped) [Optional]
Ghee - 2 tbsp (hot)

Preparation

  • Mix all the flour.
  • Heat ghee and add to flour. Mix and keep aside
  • Mix rest of the ingredients in a separate bowl and keep aside for 15 mins.
  • Add flour mix and mix together. Keep aside for 5 mins.
  • If the mix is not doughy to form maddur vada, add water 1 tsp at a time and make dough
  • When ready, heat oil for deep fry
  • Make dough balls and then flat discs. Fry until golden brown in med heat
