Coconut rice

Ingredients

Rice - 1 cup
Grated Coconut - 1/2 cup
Ginger - 1 inch (finely chopped and smashed)
Channa daal - 1 tbsp
Urad daal - 1 tsp
Green Chilis
Mustard seeds
Curry leaves

Prep method

  • Cook rice. Spread it and allow to cool. Srinkle salt
  • In a pan, heat coconut oil. Add mustard seeds and allow to splutter
  • Add Urad daal, channa daal and cashew until golden brown
  • Add red chilis and curry leaves
  • Add asafoedita and coconut. Fry for 2-3 mins until lightly brown
  • Mix with rice
