Serves 2 to 4
Ingredient
Egg - 4 (hard boiled, peeled and halved) ... frying this in oil is an option
Onions - 3 (thin long slices)
Tomato -1 (diced)
Green chilly - 4 (slit length wise)
Ginger - 2 tbsp (cut & smashed)
Garlic - 1 tbsp ... (cut & smashed)
Curry leaves
Garam Masala- 1 tsp
Chilly powder- 1 1/2 tsp
Turmeric powder- 1/2 tsp
Pepper powder- 1/2 tsp
Coriander powder- 2 tsp
Salt
Oil
Preparation method
- Heat oil in a pan. Add ginger, garlic and green chilies. Fry for a few minutes until very light brown
- Add onion and fry in low heat to avoid burning the onion. Add salt. Fry until translucent and light brown
- Add diced tomatoes. Fry until tomatoes are mushy
- Add 2-3 tablespoons of water. Add chili powder, garam masala, turmeric, pepper and coriander powder. Mix well. Fry well until oil separates.
- Add 1/2 cup of water and add eggs. Allow to cook for a few minutes until mushy
