Inji Puli Curry


Ingredients
Ginger – 100 gm
Mustard – 1 tsp
Curry leaves
Salt
Coconut oil


Ingredients for masalaTamarind pulp – 1 tsp
Chilly powder – 2 tsp
Coriander powder – 2 tsp
Fenugreek powder – 1 tsp
Jaggery powdered – 2 tsp


Preparation Method

  • Cut the cleaned ginger in think round slices
  • Fry them in coconut oil. Separate the pieces from oil
  • Crush the fried ginger into small pieces using a mortar and pestle. Please do not use a mixer
  • Mix tamarind pulp, chilly powder, coriander powder, fenugreek powder, jaggery and salt with 1 cup water
  • Heat the oil used to cooked the ginger
  • Add mustard and heat until they  splutter mustard
  • Add curry leaves 
  • Add the paste and crushed ginger pieces
  • Let it boil till it becomes thick
