Prawn curry with Brinjal

Ingredients

Prawns / Shrimp - 1 pound
Brinjal - 5-6 (slices)
Avaraikai - 12-15 (squares)
Tamarind water - 1 cup with 1 lime-size ball
Raw peanuts - 1/3 cup
Tomatoes - 1.5 (diced)
Small onions - ~7-8 (cut)
Mustard seeds - 1/2 tsp
Urad daal - 1 tsp
Fenugreek seeds - 1/2 tsp
Garlic - 10-12 (sliced) i.e. ~1/4 cup
Turmeric powder - 1/2 tsp
Sambar powder - 1 tbsp _or_
sambar powder 2 tsp + 1/2 tsp corr.powder + 1/2 tsp chili powder + 1/2 tsp meat masala
Green chili - 2-3 (slit) 
Curry leaves - 1 sprig

Masala ingredients

Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Garlic - 3-5
Small onions - ~12-15
Curry leaves -  sprig
Tomato - 1/2
Grated coconut - 1/3 cup

Preparation method

Masala

  • Heat oil in a pan. Add cumin seeds and fennel seeds and fry. Do not allow to burn
  • Add garlic, onions and curry leaves. Fry until onion is translucent
  • Add tomatoes and salt. Fry for a min
  • Add coconut. Fry until light brown. Take off heat and allow to cool. Grind to smooth paste

Main dish

  • Heat oil in a pan. Add mustard seeds and allow to splutter
  • Add fenugreek seeds and urad daal
  • When golden brown, add onions, garlic and curry leaves. Fry till onions are translucent
  • Add turmeric powder and fry for a minute. Add salt
  • Add cut broad beans and fry for 3-4 mins
  • Add brinjal and fry for 3-4 mins
  • Add raw peanuts and fry for 3-4 mins
  • Add shrimp / prawns. Fry for 3-4 mins (color will change and prawn / shrimp will curl)
  • Add sambar (masala powders) and fry for 3-4 mins until raw smell is gone.
  • Add strained tamarind water and add additional water as per your preference. Bring to a boil and allow to boil for 3-5 mins.
  • Add masala paste. Adjust water and bring to boil. Boil for 3-5 mins
