Chicken stew

Ingredients

Chicken - 1 lb (1/2 kg) _or_ mutton 
Potatoes - 1 (cubed) about 1/2 cup
Mix vegetables (carrots, beans, cauliflower, peas) - 1/2 cup
Cloves - 5-6
Cinnamon sticks - 2-3
Bay leaves - 2-3
Cardamom pods - 4-5
Whole pepper - 10-12
Ginger - 1 inch (smashed / chopped)
Garlic - 1 tsp (smashed and chopped)
Green chili - 2-3 (slit)
Onion - 1 cup - thin (1 inch slices) 
Garam masala - 1/2 tsp
Cumin powder - 1/4 tsp (optional)
Pepper powder - 1/4 tsp (optional)
Curry leaves - 1 sprig
Thin coconut milk - 1/4 cup (can) + 2 cups water
Thick coconut milk - 1/4 cup (can) + 1/2 cup water
Cashews - 1/4 cup (fried)
Coriander leaves - 2 tbsp finely chopped (Optional)

Method

  • Heat coconut oil in a pan. Add cloves, cinnamon sticks, cardamom, whole pepper and saute for a minute or so
  • Add onions and fry until translucent
  • Add ginger garlic and fry for a couple of mins
  • Add chicken and fry until it lets out juices and they evaporate
  • Add potatoes and veggies. Cook for couple of mins
  • Add think coconut milk and cook for 10-15 mins until vegetables are cooked
  • Add powders and cook for 4-5 mins
  • Take off heat. Add coconut milk and cashews and coriander

Note: If mutton, pressure cook with a little salt for 4-5 whistles
