Potatoes - 1 (cubed) about 1/2 cup
Mix vegetables (carrots, beans, cauliflower, peas) - 1/2 cup

Onion - 1 cup - thin (1 inch slices)

Ingredients
Chicken - 1 lb (1/2 kg) _or_ muttonPotatoes - 1 (cubed) about 1/2 cup

Onion - 1 cup - thin (1 inch slices)
Garam masala - 1/2 tsp
Cumin powder - 1/4 tsp (optional)
Pepper powder - 1/4 tsp (optional)
Curry leaves - 1 sprig
Thin coconut milk - 1/4 cup (can) + 2 cups water
Thick coconut milk - 1/4 cup (can) + 1/2 cup water
Cashews - 1/4 cup (fried)

Coriander leaves - 2 tbsp finely chopped (Optional)
Method
- Heat coconut oil in a pan. Add cloves, cinnamon sticks, cardamom, whole pepper and saute for a minute or so
- Add onions and fry until translucent
- Add ginger garlic and fry for a couple of mins
- Add chicken and fry until it lets out juices and they evaporate
- Add potatoes and veggies. Cook for couple of mins
- Add think coconut milk and cook for 10-15 mins until vegetables are cooked
- Add powders and cook for 4-5 mins
- Take off heat. Add coconut milk and cashews and coriander
Note: If mutton, pressure cook with a little salt for 4-5 whistles
