Pineapple upside down cake

Ingredients

Butter - 8 tbsp room temp
Brown sugar - 1/2-3/4 cups
Pineapple slices - 6-10 to fill the pan
Buttermilk - 1 cup
Eggs - 3 cups
Sugar - 1 cup
All-purpose flour - 2 cups sifted
Baking soda - 1 tsp
Salt - 1/2 tsp
Maraschino cherries - 6-10 without stems

Preparation method

  • Preheat oven to 350º.
  • Melt 4 tbsp of butter into cast iron skillet or round cake pan. Swirl pan until bottom and sides are well-coated with butter to prevent cake from sticking.
  • Sprinkle brown sugar evenly over the melted butter in the skillet or cake pan.
  • Place pineapple slices on top of the brown sugar. Add maraschino cherries to the center of each pineapple slice.
  • Separate egg whites and whip until soft peaks
  • Mix sugar, AP flour, baking soda, salt together in a separate bowl
  • Add  buttermilk, 4 tbsp melted butter, eggs yolks and whisk together until well-combined.
  • Fold in whipped egg whites
  • Pour evenly over the pineapple, cherry, and brown sugar layer in the skillet or cake pan.
  • Cook until toothpick or skewer inserted in the center comes our clean. Should take 30-45 mins
  • Allow to stand for about 10-12 minutes before transferring to a cake stand. Allowing to sit too less will break cake. Allowing to sit too long will harden the sugar in the bottom
