Sriracha Tomato Pasta

Ingredients

Ziti or Penne - 1 cup
Olive oil - 4 tbsp
Onion - 1/2 cup 1 inch slices
Jalapeno - 1 (chopped to small pieces)
Sun-dried tomatoes - 1/4 cup (julienned)
Garlic - 5-6 cloves (Finely chopped and smashed)
Oregano - 1/2 tsp
Red chili flakes - 1 chili
Mia's Sirach pasta sauce - 1 cup
All purpose flour - 1 tbsp
Milk - 1/4 cup
Parmesan cheese - 1/4 cup
Jack or mozzerella - 1/4 cup
Basil leaves - 6-8 leaves

Preparation method

  • Cook pasta in water with salt and some olive oil. Save the pasta water
  • Add about 2 tbsp of olive oil in a pan and heat it in low heat
  • Add onion and saute until soft
  • Add garlic, jalapeno and sun dried tomatoes. Cook for a couple of minutes
  • Add chili flakes and oregano. Cook for a couple of minutes
  • Add sriracha paste and cook down
  • Mix all purpose flour in some pasta water. Add to pan and cook for a few mins
  • Add milk and cheese. Cook in low until cheese is melted
  • Turn off heat and add basil leaves
  • Add 2 tbsp olive oil and mix well
