Amma's Chicken

Ingredients

Chicken - 3/4 kg
Onion - 2 finely chopped (3-4 cups)
Ginger - 1 inch piece
Garlic - 12 cloves
Pudina - 1/2 cup (finely chopped)
Coriander leaves - 1/2 cup (finely chopped)
Tomato - 2
Chili powder - 2 tsp
Coriander powder - 4 tsp
Garam masala - 1.5 tsp
Green chilli - 12-15

Prep Method

Grind ginger garlic to make paste
Heat 1/4 cup oil
Fry ginger garlic paste until lighly brown
Add onion and cook in medium heat until soft and mushy. Cook in low enough heat to cook but not fry
Add tomato and cook until mushy
Add chicken and cook for a few minutes until chicken fat melts
Add turmeric, chili powder, coriander powder and garam masala. Cook until masala is well cooked
Add pudina and coriander. Cook until chicken is well cooked and oil starts leaving
If you want to make a curry, add boiled hot water. Adding cold water to uncooked chicken could make the gravy smell of raw chicken
