Chocolate Cake (3 x 9in)

Ingredients

AP flour - 3 cups
Sugar - 3 cups (2 cups may be enough)
Cocoa powder - 1.5 cups
Baking soda - 1 tbsp
Baking powder - 1.5 tsp
Salt - 1.5 tsp
Eggs - 4#
Buttermilk - 1.5 cups (alt - use 1.5 cups of milk -minus- 2 tbsp of milk +plus+ 2 tbsp of white vinegar)
Hot water - 1.5 cups (all - hot black coffee)
Vegetable oil - 1/2 cup

Method

  1. Grease pan and coat with cocoa powder
  2. Heat oven to 350F/180C (In small ovens, heat to 320F/160C)
  3. Sift 3 cups of AP flour
  4. Add sugar, cocoa powder, baking soda, baking powder, and salt. Mix together
  5. Break in eggs. Add butter milk, veg oil. Mix well (just until mixed without lumps)
  6. Add hot water and mix with spatula.
  7. Pour into 3 9-in pans
