Ingredients
Coconut oil - 2 tbspCardamom - 3-4
Cloves - 3-4
Cinnamon sticks - 1 inch piece
Bayleaves - 1 or 2
Black pepper - 1/2 tsp
Onions - 1 - 1.5 cups (1 inch thin slices)
Ginger garlic paste - 1 tbsp
Green chili - 3-4
Vegetables - 2 cups (Potatoes, Beans, Carrots, Cauliflower, Peas)
Thin coconut milk - 1/2 cup
Thick coconut milk - 1/2 cup
Preparation method
- Heat coconut oil in a pan. Add cardamom, cloves, cinnamon sticks, bay leaves
- Add onions and saute for 3-4 mins
- Add ginger garlic paste and green chilis. Saute until onion is translucent
- Add vegetables and salt. Add think coconut milk and enough water to cook the vegetables. Cook covered until vegetables are done
- Add thick coconut milk. Bring to boil
- Add tadka of oil and mustard seeds
