Taro root fry

Ingredients

Taro root - 5-6
Mustard seeds - 1 tsp
Urad daal - 1 tbsp
Curry leaves - 1 sprig
Chili powder - 1 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp

Preparation method

  • Pressure cook taro root for 1 whistle with salt. Remove heat intermediately and allow to cool so that it does not overcook. 
  • Peel and dice into 1/2 in cubes. Mix well with masala powders and salt
  • Heat 2 tbsp oil in a pan. Add mustard seeds and saute until they splutter
  • Add urad daal. Saute until they brown
  • Add curry leaves and saute for a few seconds
  • Reduce heat to low-medium. Leave to brown. Stir and leave to brown. Repeat until satisfactory and raw smell of masala smell is gone. Ajdust salt as needed
