Mixed Veg Korma

Style: Mughlai

Ingredients
Mixed vegetables - 2 cups (beans, carrots, peas)
Potato - 1 (chopped)
Cinnamon - 1 stick
Cloves - 4
Star anise -2
Onions - 1 medium sized
Tomato - 1 medium sized
Ginger garlic paste - 1 tbsp
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt to taste

To grind into paste
Green chillies - 6
Coriander seeds - 1 tsp
cumin seeds - 1 tsp
Aniseed - 1 tsp
Cashews - 6
Poppy seeds - 1 tsps in 1 tsp of water
Coconut - 3 tbsp
Coriander leaves - 1 tbsp

Preparation Method
Heat some oil in a pressure cooker. Add cinnamon, cloves and star anise
Add the chopped onions. Saute until golden brown
Add the ginger garlic paste and satue for a minute
Add the tomatoes and fry until mushy
Add the chopped vegetables, salt, garam masala and turmeric powder fry for a couple of minutes
Add the ground masala and saute for a couple of minutes
Add two cups of water. Close the pressure cooker and cook until one whistle
Simmer for about 5 minutes. Garnish with coriander leaves
